Our chef de cuisine Matthias recommends:
Käseknödel (cheese dumplings)
Ingredients:
- 500 g potatoes
- 70 g Maizena (corn starch)
- 50 g leek or shallots
- 1 coffee spoon salt
- nutmeg
- 1 egg
- 120 g cheese (f.e. Edam), cut into small cubes or grindes
- 2 slices of toast, cut into cubes
- 20 g butter
Preparation:
Boil and peel the potatoes. Jam hot potatoes with potatoe ricer. Mix with Maizena, leek, spices, egg and cheese, knead until smooth immediately.
Make a roll out of the dough and slice it into 8 portions. For the stuffing bake the toast in hot butter. Fill the dough with the bread and form dumplings.
Give the dumplings into boiling salt water and let them boil on small flame.
Hint: Serve with brown butter and fresh vegetables (for example steamed red pepper)
